Yes, I’m for reals. I had seen this recipe for banana based ice cream on Pinterest for quite some time, but had yet to break down and actually make it. Who knew what deliciousness I had been missing out on!
I recently started the Paleo diet (adjusted a bit for Gastroparesis) and have been met with amazing results. My Gastroparesis symptoms have greatly been reduced and my weight has finally started to go down. No matter how many calories and no matter how much or how little I ate I always gained weight. Until I started Paleo. Anyways, the one thing I don’t like about Paleo is it does not satisfy my unquenchable sweet tooth. I tell you all of this to let you in on why I tried this amazing recipe.
So I threw three cut up bananas in a sandwhich baggie and put it in the freezer. A few hours later I put the bananas in my food processor and began to blend those bad boys. Here is the traditional recipe:
4 bananas
2 T peanut butter
2 T cocoa powder
I opted for three bananas, which is actually quite a bit of ice cream. Two servings, at least. Also, this “ice cream” doesn’t really refreeze. So you need to eat what you make. I also added coconut milk as needed to get a creamy consistency (I use carton coconut milk, vanilla flavor).
After I had reached the consistency I wanted I quite enjoyed just the bananas and coconut milk. But I still wanted to try the whole recipe, so I added a spoonful of peanut butter and cocoa powder. It was delicious!
So here is my version of the recipe:
3 frozen bananas
vanilla flavored coconut milk as needed
1 spoonful peanut butter
1 spoonful cocoa powder
My roommate (not on Paleo) loved this recipe so much she raved and raved and nicely begs for me to make it. We’ve also experimented with different flavors. We have tried just plain, we’ve added a few spoonfuls of nutella (delicious) and next I’d like to try strawberry and cake batter. I’ll share those recipes when I try them
